WHere is a home-style take on a beverage found on our latest menu. It's a batch premix that's packed with tastes of the holiday season, making it ideal for a festive gathering. Save the extra syrup for brunch beverages, desserts, or to make more rounds of the drink.

Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Syrup: Put all the components inside a pan, bring to a simmer, mixing so the sugar melts. After that, turn off the heat allowing it to cool entirely. Transfer to a sealable bottle, seal and refrigerate it in the fridge, it can be stored for about a month.
For the Batch Mix: Pour every liquid ingredients into one big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, to ensure it's completely strained.
For serving: Add 85ml of your premix into a stirring glass filled with ice, gently stirring gently for about 60 seconds to chill. Strain to a frosted cocktail glass or equivalent, garnish with the cranberries and finish using a light spray of the essential oil over the top.
